Golden raisins are made by sun-drying and tray-drying different varieties of grapes. They are small, sweet-tasting, and have a wrinkled texture. Indian raisins are available in a variety of sizes and colors. Their taste is similar to that of grapes, but drying them concentrates the sugars, making them sweeter. They are a naturally stable food and do not spoil easily due to their low moisture content. Raisins are essentially dried natural seedless grape varieties, usually dried in the sun on paper trays or on the vine. Natural (sun-dried) seedless raisins include Thompson seedless raisins and other newer varieties such as Selma Pete, Fiesta, and Dovean. Seedless raisins “California Golden” and “California Dip” are dried and mechanically processed. Other raisin varieties include Zante Currant, Muscat, Mon Nuka, Sultana, and other seedless varieties. Raisins can also be further processed into raisin paste and raisin juice concentrate. After drying, the raisins are collected from the vineyards and kept in wooden containers and processed as required.
